OCTOBER

GRAPE-HARVEST:
1) Grape harvest, squeezing, putting in tun
2) Fermentation
3) Racking, pressing, putting in barrel
4) Wine aging

Note: the time the grape-harvest begins can be different every year and we are not able to choose it in a large advance. It depends on weather and grape maturation. Anyway, this kind of activity is in September or October.

Grape-harvest takes about 3-4 weeks so it’s easy to decide your travel.

During the year you can live other important moments which regards this activity.
– Pruning (January–February)
– 1st biological treatment (March)
– Shoots tying and biological treatment (April – May)
– Barren buds removing and biological treatment (June – July)
– Surplus leaves removing (August)
– New wine tasting and traditional Umbrian dinner with mushrooms, polenta and roasted game (November 11st, San Martino Day)

NOVEMBER

OLIVE OIL:
1) Olives harvest
2) Visit to the oil-mill

Note: the time the olive harvest begins can be different every year and we are not able to choose it in a large advance. It depends on weather and olives maturation. Anyway, this kind of activity is in October or November.
